There are punch recipes galore – with and without alcohol. This recipe from Transa’s Dave has a nice Christmassy flavour thanks to the oranges, plus the ginger warms you up. He explains how to make his punch in the video.
Punch with apples, rum or lemon – recipes abound for this hot winter drink. Transa’s Dave is a qualified chef. In this post, he reveals his recipe for a punch with orange and ginger.
To do this, he took the stainless steel Petromax percolator outside into the snow. He used this to boil water for the exquisite orange and ginger punch, which he’d prepared separately beforehand. You can find the ingredients below; in the video, Dave shows you step by step how to make the punch.
Ingredients
4 oranges (large and juicy)
50 g ginger
4 cardamom pods
400 g sugar
150 ml water
Preparation
Put the sugar and water into a pan and bring to the boil. Wash one orange in lukewarm water and grate the zest with a grater. Then squeeze all the oranges. Wash the ginger and crush it together with the peel. Crush the cardamom pods as well. In the meantime, reduce the sugar water until it is slightly caramelised. Douse with the orange juice, add the crushed ginger and cardamom pods and simmer for 10 to 15 minutes. Then add the zest and leave to steep for 30 minutes.
This is now the syrup, which you can pour into a cup and top up with hot water to your liking. The perfect drink for cold winter days.
